SUNDA GEISHA PUNTANG

Puntang coffee is a rare and highly prized variety from the Puntang Mountain region in West Java, Indonesia. Renowned for its unique flavor profile, it's often characterized by its floral aroma, hints of citrus, and a smooth, lingering finish. The batch that won the auction in Atlanta SCAA competition on 2016 likely showcased exceptional quality, perhaps with notes of caramel or chocolate, and garnered attention for its rarity and exquisite taste.

SEMI WASHED

Semi-washed coffee beans, involve a hybrid of washed and natural processing methods. In this process, ripe coffee cherries are pulped to remove the outer skin, but instead of fully fermenting to remove the mucilage, the beans are partially washed to leave some mucilage intact. Then, the beans are dried with the mucilage still attached, resulting in a unique flavor profile that combines elements of both washed and natural processing.

FULL WASHED

The full washed coffee bean process involves several steps. First, the ripe coffee cherries are pulped to remove the outer skin, leaving behind the mucilage-covered beans. Then, these beans are fermented in water tanks to loosen the mucilage. After fermentation, the beans are thoroughly washed to remove any remaining mucilage. Finally, the washed beans are dried either in the sun or using mechanical dryers until they reach the optimal moisture content for storage and roasting.

NATURAL

Natural coffee beans refer to a type of coffee processing method where the beans are dried inside the coffee cherry fruit rather than after the cherry has been removed. In this method, the whole ripe cherries are harvested and spread out to dry in the sun, allowing the beans to ferment slightly within the fruit. This process often results in a distinct flavor profile with fruity and wine-like notes.

HONEY

Creating honey processed coffee beans involves removing the outer skin of the coffee cherry and then allowing the remaining fruit to dry on the bean. During this drying process, some of the fruit's natural sugars are absorbed into the bean, giving it a sweeter and more complex flavor profile. Once dried, the beans are then processed further to remove any remaining fruit pulp before roasting.

WINE

Wine coffee beans refer to a type of coffee processing method where the beans are dried inside the coffee cherry fruit rather than after the cherry has been removed. In this method, the whole ripe cherries are harvested and spread out to dry in the sun (30-60 days), allowing the beans to ferment slightly within the fruit. This process often results in a distinct flavor profile with fruity and wine-like notes.

ROBUSTA

Robusta green coffee beans are prized for their dense, bold character and distinctive flavor profile, which includes earthy, woody, and chocolate notes with a slight spiciness. These beans are predominantly cultivated in the rich, volcanic, soils of Sumatra, Java, and Sulawesi, benefiting from the tropical climate and traditional farming practices. Known for their high caffeine content and robust resilience to pests and diseases. Indonesian robusta green beans are often sought after for their consistency and quality. They are a popular choice for creating strong, full-bodied coffee blends and are integral to various traditional Indonesian coffee preparations, reflecting the deep-rooted coffee culture of the region.

CASCARA

Cascara, also known as coffee cherry tea, is made from the dried husks of coffee cherries. The husks are typically discarded during the coffee bean processing, but they can be brewed into a tea-like beverage. To make cascara tea, the husks are steeped in hot water, similar to how you would brew tea. The resulting beverage has a fruity and slightly sweet flavor, distinct from traditional coffee. It's a popular drink in some coffee-growing regions and gaining attention in specialty coffee shops around the world.
